Located in the highlands of El Salvador, Ferma las Delicias is a stunning coffee farm that has been producing high-quality coffee for generations. As soon as we arrived at the farm, we were struck by the natural beauty of the area. The farm is situated in a valley surrounded by rolling hills covered in lush green vegetation.
The owner of the farm, Mr. Miguel, was kind enough to take us on a tour of the entire property, which includes over 100 hectares of coffee plants. Mr. Miguel was incredibly passionate about his farm and his coffee, and he explained to us in detail about his growing techniques and processing methods.
One of the most interesting things we learned about was the various coffee varieties that are grown on the farm. Ferma las Delicias cultivates several different varieties of coffee, including the famous Geisha variety, as well as Caturra, Bourbon, and Pacas. Mr. Miguel explained to us how he chooses the right variety of coffee for each area of the farm, based on factors such as soil composition, climate, and altitude.
We also had the opportunity to see the coffee processing facilities on the farm, where the coffee cherries are sorted, depulped, fermented, and dried. Mr. Miguel explained to us how he uses different processing methods for different varieties of coffee, depending on their unique characteristics. For example, the Geisha variety is processed differently than the other varieties, as it is known for its delicate and complex flavor profile.
Another highlight of our visit to Ferma las Delicias was the chance to taste some of the coffee produced on the farm. We were able to cup several different varieties of coffee, and we were blown away by the quality of each one. The coffee had a bright acidity and complex flavor profile, with notes of citrus, berries, and chocolate.
